I do not provide witnesses. If your document requires witnesses, they will need to be present at the time of notarization. Often they need to be not related or have a direct benefit of the documents. Many people use a couple of friends or neighbors.
I do not notarize documents in any language except English. A notary must be fluent in a foreign language to notarize documents in that language. I am unable to speak any language other than English fluently.
